- GROUND CHICKEN – I tested chopped chicken breasts and ground chicken for this soup, and ground chicken worked the best. You’ll get a little bit of chicken in every bite, and it’s a lot less prep.
- LOW-SODIUM BROTH – I use chicken broth, but beef or veggie broth works just as well. Use what you already have on hand.
- CARROTS & CELERY – Form the vegetable base of the soup
- ONION & GARLIC – Add rich, savory flavor.
- HERBS – Fresh thyme, rosemary, and a bay leaf give this soup extra flavor and nutrients. Dried herbs work just as well if preferred.

Substitutions
Swap ground turkey: It works just as well as chicken.
Vegetarian or vegan version: Omit the chicken and use vegetable broth for a completely plant-based soup.

How to Make White Bean & Kale Soup
This white bean and kale soup comes together in one pot and builds flavor step by step.
Begin by sautéing carrots, celery, onion, and garlic with fresh thyme and rosemary in extra virgin olive oil. As the veggies and herbs cook, they create the savory foundation of the soup. After a few minutes, the onions become soft and translucent, and the kitchen will start to smell incredible.
Next, add the ground chicken to the pot. As it cooks, break it up with a wooden spoon so it blends evenly into the vegetables. Let it cook until it’s opaque.
Once the chicken is cooked, pour in the broth and add a bay leaf. Bring everything to a gentle boil to develop the flavors. Once boiling, add the white beans and reduce the heat to a simmer for a few minutes.

Instructions

Cook the Ground Chicken: Add the ground chicken and the remaining ½ teaspoon salt. Break the chicken into small pieces with a wooden spoon and cook, stirring occasionally, until the chicken is fully opaque, about 8 minutes.
Add the Broth and Boil: Pour in the broth and add the bay leaf. Increase the heat to high and bring the soup to a boil.
Simmer the Beans: Stir in the white beans, reduce the heat to medium-low, and simmer for about 5 minutes to allow the flavors to blend.
