Making chocolate pecans yourself lets you control the ingredients by choosing simpler chocolate chips—less sugar, no corn syrup, and no emulsifiers like soy lecithin. - RAW PECAN HALVES – Roasted nuts are often coated in rancid oil, so use raw pecans for the best flavor and quality.
- CHOCOLATE CHIPS – Dark chocolate chips with minimal ingredients are preferred, but you can use any variety you like.
- FLAKY SALT – Finishing salts such as Fleur de Sel or Maldon are perfect for sprinkling over the chocolate covered pecans.
- VANILLA EXTRACT – Optional, but adds a subtle layer of flavor. If you don’t have any, skip it.

How to Make Chocolate Covered Pecans
These chocolate covered pecans come together with only 15 minutes of active time. You’ll need a saucepan, a large glass or stainless-steel mixing bowl, a silicone spatula, a rimmed baking sheet, parchment paper, and a little patience.
STEP 1: The key is to slowly melt the chocolate, so it stays smooth and glossy. I use a simple water bath method, which gradually melts the chocolate without overheating it. This method gives you more control, and besides, I don’t have a microwave. If you’ve never used a water bath before, I walk through the exact method in the recipe card below.

STEP 2: Once the chocolate chips are completely melted and silky smooth, fold the pecans in and stir until they’re evenly coated.

STEP 3: Next, spread them in an even-ish layer on the parchment-lined baking sheet and sprinkle with flaky salt before popping them in the fridge for 45 minutes to set. For a more polished look, you can dip each pecan halfway in chocolate—but the cluster method is much faster.

STEP 4: Once set, quickly break apart the clusters (so your hands don’t melt the chocolate) and transfer them to a glass container with a tight-fitting lid. They’ll keep at room temperature for about a month, or you can freeze them for up to 3 months.

Ingredients
1 (9-ounce) bag dairy-free dark chocolate chips, such as Enjoy Life Dairy-Free Dark Chocolate Morsels
1 pound raw pecan halves
1 teaspoon flaky salt, such as Fleur de Sel, or Maldon
1/4 teaspoon pure vanilla extract (optional)
Instructions
Prepare the Water Bath: Fill a medium saucepan with about 2 inches of water and warm over medium heat. Place a large glass or stainless-steel mixing bowl over the saucepan to create a water bath, making sure the bottom of the bowl does not touch the water. Add the chocolate chips (and vanilla, if using) to the bowl.
Melt the Chocolate: When small bubbles form along the bottom of the pan (but the water is not simmering), reduce the heat to medium-low to maintain a temperature around 180ºF. Stir the chocolate continuously as it melts, pressing the chips against the sides of the warm bowl and scraping down the sides with a spatula as needed. Continue stirring until fully melted and smooth, about 10 minutes.
Coat the Pecans: Fold the pecans into the melted chocolate until they are thoroughly and evenly coated.
Chill to Set: Spread the chocolate covered pecans in an even layer on a parchment-lined rimmed baking sheet and sprinkle with the salt. Transfer the baking sheet to the refrigerator and chill for 45 minutes, or until the chocolate is fully set. For a more polished look, you can dip each pecan halfway in chocolate—but it takes considerably more time and requires an additional baking sheet so they don’t touch.
Break and Store: Break the pecans into small clusters. Store in an airtight container at room temperature for up to 1 month, or freeze for up to 3 months.
Notes
Disposable gloves can help reduce melting when breaking apart the clusters, but clean, dry hands work just fine if you move quickly.
