You’ve probably heard citrus fruits are high in vitamin C, and limes are no different. Vitamin C is an antioxidant that supports the immune system, the skin, and helps the body absorb iron from other foods.
Note: The acid from the lime juice can be hard on tooth enamel. I recommend drinking your mocktail with a straw (and a cup of fresh water) to protect your teeth.

Liquid Stevia Vs. Simple Syrup
Stevia is a natural non-nutritive sweetener extracted from stevia leaves. Despite being incredibly sweet, it doesn’t raise blood sugar levels or cause inflammation to blood vessels the way sugar does. Stevia is a healthier alternative to the simple syrup found in traditional mojito recipes.
Note: The process for manufacturing powdered stevia involves toxic chemicals. Powdered forms may also contain additives from GMO corn and may not be gluten-free. Try to avoid it if you can.
Cucumber Mojito Mocktail Ingredients
With only four ingredients, this mojito mocktail is quick, easy, and inexpensive. You can make a large batch for friends or scale down the recipe for a single serving. Here’s what you’ll need to serve 4-6 people.
One 12-inch English cucumber – They’re longer, have thinner skins and fewer seeds. For a lighter beverage with less fiber, remove the skins. For a heavier consistency, darker color and extra nutrients, leave the skins intact. Buy organic if you can.
1 Lime – Cut the inner flesh from the rind and discard the rind.
30 Mint leaves – It’s not a mojito mocktail without fresh mint! You can always start with less and add more to taste.
Liquid stevia to taste
Cold water and ice
How to Make a Cucumber Mojito Mocktail
Add the water, cucumber, lime, and mint leaves to a high-speed blender and blend for 1 minute or until completely liquified. Add more water as needed to reach desired consistency.
Pour over ice and sweeten with liquid stevia to taste.
Garnish with a slice of cucumber a wedge of lime and fresh mint leaves if you’re feeling fancy.

For a lighter color and consistency, peel the skins from the cucumber. It’ll have less fiber and won’t be as filling.
Recipe Tips for Best Results
Adjust the Ingredients: Use this recipe as a guide. You can easily adjust the ratio of ingredients to suit your taste. The amount of water and ice will depend on the water content of your cucumber. It’s also personal preference.
Taste Test First: A bitter lime or cucumber will ruin this recipe. Taste them before blending. If you end up with bitter fruits, adding more water and/or sweetener may help dilute the flavor.
Enjoy Fresh: Mint tends to become more bitter the longer it sits, so serve your mojito mocktails right away.
Substitutions
Cucumber Varieties: You can use a slicing cucumber instead of the English variety, but I recommend peeling it and removing the seeds before blending. Regardless of the variety, organic is preferred.
Sparkling Twist: To add some lively fizz, top off your mocktail with some seltzer (unless you’re in a state of active gut inflammation–this can cause irritation).

1/2 cupcold water
1 large English cucumber (about 12”), cut into 1” pieces
1lime, pulp removed from the rind, (discard the rind)
30mint leaves
Liquid stevia to taste
2 cupsice
Instructions
Blend: Add the water, cucumber, lime, and mint leaves to a high-speed blender and blend for 1 minute or until completely liquified. Add more water if needed to achieve desired consistency.
Serve: Pour over ice and sweeten with liquid stevia to taste.
Garnish: Finish with a slice of cucumber a wedge of lime and fresh mint leaves if desired. Enjoy immediately.
Notes
Taste the lime and cucumber before blending to make sure they’re not bitter. If you end up with bitter fruits, adding more water and/or sweetener may help dilute the flavor.
Similarly, the mint will become bitter if it sits too long, so serve your mocktails right away.
