Description
A simple sautéed asparagus recipe made with fresh lemon and dill. Cooked until vibrant and lightly browned, this quick, healthy side comes together in less than 15 minutes.
Ingredients
2 teaspoons avocado oil, or extra virgin olive oil
1 pound of asparagus
1/4 teaspoon salt
1/4 teaspoon fresh cracked pepper
1 tablespoon fresh dill, largest stems removed, finely chopped, (or 1 teaspoon dried dill)
2 teaspoons fresh lemon juice (from 1/4 lemon)
Hemp seeds for garnish (optional)
Instructions
Wash and thoroughly dry the asparagus. Trim the woody ends, then slice into 1-inch pieces on the diagonal—they’re much easier to stir when cut vs. whole.
Heat the oil in a large skillet over medium heat.
Add the asparagus, salt, and pepper. Sauté, stirring every 2 minutes or so, until bright green with lightly browned edges and just tender, about 5–10 minutes depending on thickness. Do not overcook.
Remove from heat. Immediately squeeze fresh lemon juice over the asparagus and add the dill. Stir to combine.
Optional: Garnish with sautéed lemon slices and a sprinkle of hemp seeds for added texture.
Notes
Thin spears cook in about 5 minutes, while thicker ones take a little longer. Don’t cook longer than 10 minutes, or they’ll be over-cooked.
If you consume dairy, a little Parmigiano-Reggiano on top adds a nice umami finish.
