Heat a dry pan over medium heat. Add the sesame seeds.
Toast for 2–3 minutes, shaking the pan often, until golden and fragrant. Watch them closely, they burn fast!
Transfer immediately to a plate or small bowl to stop the cooking.
Store toasted sesame seeds in an airtight glass container in the fridge for up to 6 months or freeze for up to a year. Like other nuts and seeds, they’re high in oil, so they’ll oxidize and go rancid if left at room temperature too long.
Notes
Make sure you remove the sesame seeds from the heat just before they’re fully toasted. This prevents burning, as the residual heat will finish the job.
