Easy Pesto Salmon

Description

This easy pesto salmon combines three simple ingredients: salmon fillets, prepared pesto, and a pinch of salt. A quick bake in the oven yields a flavorful,  high-protein dish in about 25 minutes. Serve it with rice or quinoa and sautéed vegetables, or use it as a simple salad topper.


Ingredients

Avocado oil spray for baking dish

2 salmon fillets (approximately 4 ounces each)

1/4 - 1/2 cup prepared pesto (2-3 tablespoons/fillet depending on size)

Pinch of salt

Crushed red pepper flakes to taste (optional)


Instructions

Preheat the oven to 350°F and lightly spray a baking dish with avocado oil or line a baking sheet with unbleached parchment.

Pat the salmon fillets dry with paper towels.

Arrange the fillets in the baking dish, leaving a little space between each one, and sprinkle with salt.

Spread 2 to 3 tablespoons of pesto over each fillet, adjusting as needed based on size and preference.

Bake for 15 to 20 minutes, or until the salmon an internal temperature of 145° F with a meat thermometer.

Check the salmon early if your fillets are thinner, since cooking time can vary and salmon can overcook quickly.

Serve warm with your favorite sides and top with red pepper flakes if desired.

Store leftovers in an airtight glass container in the refrigerator for up to 3 days.
