Description

Stay cool and hydrated with this refreshing cucumber mojito mocktail. This healthy non-alcoholic drink is the perfect summer beverage.


Ingredients

Scale

1/2 cup cold water

1 large English cucumber (about 12”), cut into 1” pieces

1 lime, pulp removed from the rind, (discard the rind)

30 mint leaves

2 cups ice

Liquid stevia or Pure Liquid Monk Fruit Drops

Instructions

Combine: Add the water, cucumber, lime pulp, and mint leaves to a high-speed blender.

Blend: For 1 minute or until completely liquified. Add more water if needed to reach the desired consistency.

Pour over ice. Sweeten with stevia or monk fruit drops to taste.

Garnish with a slice of cucumber, a wedge of lime, and fresh mint leaves if you’re feeling fancy.


Notes

·      Taste before blending – Bitter cucumber or lime can overpower the drink. Adjust with extra water or sweetener if needed.

·      Serve immediately – Mint becomes more bitter if it sits for too long.

·      Adjust texture – Peel the cucumber for a lighter drink, or leave the skin on for extra fiber and nutrients.

·      Add bubbles – Blend with minimal water, then top with sparkling water for a fizzy twist. Don’t blend sparkling water directly.

·      Single serving – Easily quarter the recipe for one glass.

·      Use a straw – Lime juice is pretty acidic, so your teeth will thank you.
