Description

Stay cool and hydrated with this refreshing cucumber mojito mocktail. This healthy non-alcoholic drink is the perfect summer beverage.


Ingredients

Scale

1/2 cup cold water

1 large English cucumber (about 12”), cut into 1” pieces

1 lime, pulp removed from the rind, (discard the rind)

30 mint leaves

Liquid stevia to taste

2 cups ice


Instructions

  1. Blend: Add the water, cucumber, lime, and mint leaves to a high-speed blender and blend for 1 minute or until completely liquified. Add more water if needed to achieve desired consistency.
  2. Serve: Pour over ice and sweeten with liquid stevia to taste.
  3. Garnish: Finish with a slice of cucumber a wedge of lime and fresh mint leaves if desired. Enjoy immediately.

Notes

  • Taste the lime and cucumber before blending to make sure they’re not bitter. If you end up with bitter fruits, adding more water and/or sweetener may help dilute the flavor.
  • Similarly, the mint will become bitter if it sits too long, so serve your mocktails right away.
